Party Leftovers Quiche

Every time we have a party or holiday get-together we have leftover cheese and vegetables from our crudite trays.  So it doesn’t go to waste, I always make a quiche with whatever we have leftover.  This is a good way to clean out your refrigerator’s veggie crisper, as well.

Party Leftovers Quiche

Ingredients

  • 2-1/2 cups chopped vegetables (broccoli, carrots, onions or whatever you have on hand)
  • Olive oil cooking spray
  • 1/2 cup shredded cheese (cheddar, Swiss, etc.)
  • 3 eggs
  • 3/4 cup skim milk
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp paprika
  • frozen prepared deep dish pie crust

Instructions

  1. Preheat oven to 350 degrees F.
  2. Take out frozen crust and allow to thaw slightly.
  3. Chop vegetables.
  4. Spray non-stick pan with olive oil.
  5. Add vegetables to pan and saute over medium heat until soft. Set aside to cool slightly.
  6. In medium bowl, whisk together eggs, milk, garlic powder, salt, pepper and paprika until well mixed.
  7. Poke holes in bottom and sides of pie crust with a fork.
  8. Place grated cheese in bottom of pie.
  9. Pour egg mixture into pie pan.
  10. Place pie on a cookie sheet and cover crust with aluminum foil.
  11. Place in oven and bake for 30 minutes.
  12. Remove foil from crust and continue baking until center is set and crust is golden.
